Comprehensive Guide to Soft Serve Product Mixes

Introduction

Rasa Royal soft serve machines are engineered to accommodate a wide range of products, including dairy, non-dairy, high-fat, low-fat, yogurt, sorbet and other soft serve varieties. For optimal results, Rasa Royal recommends using a commercially available mix specifically formulated for soft serve machines. These mixes include stabilisers, emulsifier, gum mix  and other ingredients designed to handle the stress of constant agitation in the frozen state and remain stable through multiple freeze-thaw cycles.


Rasa Royal Soft Serve Machines do not mix products for you. All mixes must be thoroughly blended and fully diluted with water before being added to the machine. While the hopper agitator keeps the product from separating ( certain model attached with agitator function), it is not designed to blend or mix products that are initially separated.

Soft serve mixes are commonly available in three forms:

  1. Liquid mix (pre-mixed, often delivered frozen or room temperature that pasteurised ).
  2. Liquid concentrate (requires dilution with milk or water).
  3. Powdered mix (requires mixing with milk or water).

Liquid Mixes

Liquid mixes are typically pre-mixed and frozen or design in room temperature, often sourced from dairies. Always ensure the mix is specified for use in soft serve machines.

Key Handling Guidelines:

  • Thaw thoroughly in a refrigerator for 1–2 days before use.
  • Shake the container well before pouring it into the machine.

Special Note:
High-fat content products (14% or more) require additional care. Over time, they may break down, causing over freeze or inconsistencies. To avoid these issues:

  • Clean the machine more frequently.
  • Replace / Refill the product more often.

Powdered Mixes and Concentrates

When using powdered mixes or concentrates that require dilution:

  • Thorough Mixing: Blend the product thoroughly before adding it to the machine. For powdered products, ensure no lumps or unblended portions remain, as these can clog the machine and cause operational issues.
  • Recommended Equipment: Use a high-quality immersion blender or smoothies blender to mix the product in a food-safe container for 3–5 minutes. Not recommended by using egg whisker or egg beater for mixing.
  • Pre-Chilling: Pre-chill the product before use. It can speed up the freezing process in machine and enough resting time for emulsification.

Important Tip:
Always stir or shake your mix thoroughly before pouring it into the machine. Avoid using mixes with solids, incomplete thawing, or insufficient blending, as these issues can disrupt machine operation.


Custom Products

Many Rasa Royal customers create custom products for their soft serve machines, such as using alternative liquids (e.g., almond milk, oak milk, hazelnut paste, pistachio paste, saffron liquid) with powders or concentrates or developing unique custom recipes. While custom products can be a great way to offer high-value treats, they often require:

  • Time and patience to perfect the recipe.
  • Regular machine maintenance to ensure consistent operation.

Common Issues with Custom Products:

  • Over Freeze happened frequently on freezing cylinder. These are often caused by insufficient sugar, fat, stabilisers, or an imbalance of ingredients. 
  • Advised to proceed few more round of R&D by experienced Rasa Royal team in order to get better setting result.

While Rasa Royal does provide specific recipes or ingredient recommendations, numerous online resources offer guidance on crafting soft serve mixes. These include suggestions for ingredient ratios and formulations.


Warranty Note

If issues arise while using a custom product, Rasa Royal technical support may require you to test the machine with a commercially available mix during diagnostics. This ensures any machine issues are not caused by the custom product.
